It is almost the weekend, we got this!
I wanted to pop in quick and share a new snack Jack has been loving [And Steve!]. I am not a huge yogurt fan, but if you are, this is for you :)
These were really easy to make and I always have Jack help me make stuff in the kitchen. He is always more willing to eat the stuff if he helped make it! I triple the recipe, then freeze them. They unthaw pretty quick so it is nice to have a stash saved up.
I hope you/and your kids enjoy them as much as our household does!
Ingredients:
1/4 cup crushed almonds or almond meal (I used granola!)
2 tablespoons coconut oil, melted
3/4 cup plain Greek yogurt, low-fat
2 tablespoons honey
1 1/2 cups fresh chopped blueberries, strawberries and/or raspberries (I have used frozen fruit too)
6-cup muffin tin and liners
Directions:
1// Place liners in the muffin tin.
2// In a small bowl, mix the crushed almonds/granola and coconut oil. Place a small amount in the bottom of each muffin cup.
3// In a medium bowl, mix the yogurt and honey. Spoon about 2 tablespoons into each cup to cover the crust.
4// Top each cup with your choice of fruit!
5// I place them in the freezer until we are ready to eat them! They take about 10 minutes to unthaw.
